Eggless latkes still hold together
Potatoes, onions and olive oil, which we store year-round, are all harvested in the late fall. This is quite convenient since potato latkes (pancakes) use all three ingredients and are a traditional food for Hanukkah, which this year begins at sundown Dec. 8. They are also a year-round customary dish in much of Eastern Europe.
